Postcards from the Cafe

While we are away, and the Ruscombe Cafe is closed, we are thinking of you and hoping health stands with you and happiness holds you close.

Super special for this week – Sue has shared a few recipes with me! Connie has a poem for next week for poetry month!! And I…am eating these Maple-Walnut Snacks from Sue’s recipe. So simple; so tasty. Keep on rolling out there:)

  • 2 cups walnuts, or other nut/seed
  • 1 cup rolled oats
  • 1/2 cup pitted dates (or apricot)
  • 2 Tbls maple syrup, or applesauce!
  • 2 tsp vanilla extract
  • 1/4 tsp salt, to taste

Are my dates soft? Yes! Whirr it all in food processor until dough forms. 
No:( They are hard as rocks and have been at the bottom of fridge since…?  Just soak dates in hot water until softish, then whirr all ingredients into dough.
Roll into wee balls.
Or get fancy: Roll balls around in a bowl of finely diced seed or nuts or coconut or hemp seed to coat.
Snack Time!
Keep in fridge or freezer:)
